Sunday Night TexMex Meal

Chef Beazley (my nickname for my husband John) is always so creative at making a fantastic meal from the crazy items in our fridge and cupboards! I’ve been wanting to start a series called something like What’s In The Kitchen?for a long time.

As John and I enjoyed preparing our dinner tonight, I decided to put the video camera on my digital camera to use!

This episode of What’s In The Kitchen? is inspired by:

A pot of cooked beans!


Before my husband went away for work a couple days ago, he slow cooked a pot of pinto beans. Then…they were moved to the fridge and have been waiting to be refried. I was tired of looking at them AND the bacon grease that was left in the pan on the stove BECAUSE I was dreaming about the most incredible refried beans that Chef Beazley made a few weeks ago. He got the recipe from the Homesick Texan blog! I proposed we make a TexMex meal and recreate the amazing beans (that’s almost an oxymoron – amazing & beans in the same sentence – but seriously they are fantastic!).

Summer Project :: In Progress

UPDATE – Here is the Summer Project :: FINISHED!

So here I sit after the magical month of July, facing reality! Needing to attack my Summer Project list.

#1 – Clean sweep and organize my collection under the stairs in our basement

It looks worse than it is, I’m convinced.

I kicked off this action item last night, by committing to 30 minutes to get started.

First order of business – remove everything!

Wow – much better energy. I swept the floor and then turned around.

Now, I’m left with these piles of excitement.

John bet me that the disaster will still be in the middle of the basement when he gets home…in a week.

I bet him that he was WRONG! Yikes…

As you may be able to tell, I’m procrastinating from doing my 30 minutes tonight…here I sit…blogging!

However, in order to win this…I need to get off my booty.

I WILL win this. I will…I will.. (just practicing my self talk)

P.S. Anyone want to come over and help?? It’ll be fun… The fridge is stocked with cold ones AND I have Rhubarb Slush waiting for your arrival! My sweet hubby also insisted I be left with lots of groceries to ensure I actually ate real food, so I didn’t resort to eating cooking for one (Bach”ette”ing It) meals – so I’ll cook for you. He he…

Spring Cleaning :: Dresser

The top middle drawer in my dresser has been a catch all for way too long!!

We moved into our house 2 1/2 years ago and it’s never been organized or purged through. SOOO…after much procrastination, I tackled the project.

Then I took EVERYTHING out and cleaned the nice fabric on the bottom of the drawer.

Then I threw LOTS away, relocated many items, and reorganized the remaining items!

I’ve even managed to keep it this clean for over a month!! He he…I celebrate all milestones.

Spring Cleaning :: Bathroom

The disorder of my bathroom drawers have been driving me bonkers for awhile now, however I hadn’t taken the time to attack the mess until Sunday afternoon!

They were plum full and highly unorganized!

This particular drawer required a daily stuffing action to close the drawer!

My action steps included having a garbage bag ready and empty one drawer at a time.

Don’t even think about commenting on this gross picture of hair & makeup in the drawer – if you haven’t looked at the bottom of your own drawers… and could eat from them! He he…

Then I cleaned away! The final product was so refreshing!

Spring has sprung!

We’re at my parents this weekend for a visit and after a walk with my mom; I noticed something “Christmas” looking in the distance. As I got closer, I realized that my mother had a holiday wreath, red bow and all, still hanging on a plant hanger near the front door.

“Why on earth do you still have a wreath up – its March and gorgeous outside?”

“It’s fresh, was a gift from our investment banker, and is really expensive” my mother quickly spouted back.

“Typical…” I said under my breath….you probably recall my mom is a bit of a “pack rat” (remember I talked about my collector mother and sister in my Clear Your Clutter  post AND my sister wrote about a similar topic in her recent Copper West post – Wire Crosses).

I offered my developing creative skills to revive her wreath with a quick craft session and “Spring/Easter” it up!

My mother is always good for lots of supplies, so I went digging through her collections! This is what I came up with!!

  

Hmm…I’m quite impressed myself!!

I was in the middle of the mall last Monday and I gave out a GIGGLY shout of excitement.

In my Facebook Inbox was a message from The Happy Baker with the subject line:

Mini Egg Shortbread Cookies 

I don’t think I’ve told you this before but I LOVE Mini Eggs!!!

I’m addicted to them. I can remember the day last summer – when I discovered, while in line at Wal-Mart, that they are sold year round now!

You see John didn’t make eye contact with me after my discovery – but he was showing off his cute grin that I was interpreting as – he was laughing at me!

Fast forward to now – after getting the message, I instantly wanted to make this new cookie recipe. When I went grocery shopping with John later that afternoon – I tried to sneak a bag of Mini Eggs into the cart. John snapped them back out and informed me:

“I don’t support the Mini Egg diet”

Hmmm…lucky for me – John is gone for a couple weeks, so I got me some Cadbury Mini Eggs and whipped up a batch of these divine creations!!

I made them last Wednesday – before a girlfriend came over for supper. SO I made a few of them GREEN – to help make our dinner date dessert more festive for St. Patrick’s Day!

They are SOOOO scrumptious!

Mini Egg Shortbread Cookies recipe from The Happy BakerHERE.

Preheat oven to 275 degrees.

Sift together 1 1/4 cups of flour, 1/2 cup cornstarch and 1/2 cup of icing sugar.

Cream together the dry ingredients and 1 cup of butter (at room temperature) and a pinch of salt until combined and a dough is formed.

Stir in Mini Eggs (200g bag broken into small and medium pieces)

Roll into small balls and place on a cookie sheet lined with parchment paper. Flatten balls with your fingers and bake in oven for 22-24minutes.

Let cool and Enjoy!

(For my American followers – this may be a foreign drink to you! It’s vodka or rye, Kaluha, coke & milk mixed. Don’t turn your nose up until you’ve tried it! It’s absolutely divine – especially when you spice it up by using Cherry Whiskey, Root Beer Schnapps, OR Dr Pepper).

 

A few weeks ago – I thought I’d be a real awesome housewife and posted this as my Facebook status:

“Excited for my hubby to get home tonight! I better get to "tidying" – this domestic goddess is constantly in training ;) Maybe I’ll throw some muffins into the oven while I’m at…he he…”

It got a real fabulous discussion started! A few tips and fabulous sayings resulted.

 

My friend Sandra suggested: “sprinkle some cinnamon on those muffins…the aroma will add to your domestic goddess amazingness!”

I tried this & it worked SOOO well!

My friend Jenn shared: I have a magnet on my fridge that says "both of us can’t look good, it’s either me or the house"

Sandra then shared: "I believe in miracles…Keeping this place clean is one of them"

Rounding off the fun was another quote from Jenn: “I understand the concepts of cooking and cleaning, I am just not sure how they apply to me"…

Trust you can “use” a few of these in your household!!
