Go Canada Go!

Last night, my hubby and I watched the Olympic Men’s Hockey game – Canada vs USA! John’s Facebook status made me giggle:

“I love my wife…home made pizza and cold beer for the hockey game. We rooted for different teams, mine won, I’m so spoiled.”

Despite Canada’s loss last night – there is still hope for a podium finish ;)

Favorite Breakfast

My all time FAVORITE breakfast is Eggs Benedict.ebenedict

When I first met my sweetie – I wasn’t sure how we were going to function since he didn’t “prefer” eggs other than in breads or desserts. He also does NOT eat fish/seafood – so he hadn’t ever tried Hollandaise Sauce either. SO you can see why I was concerned when my partners noise curled at the two main ingredients of my favorite breakfast. I’m quite sure that the first 2 years of our relationship, I only enjoyed this rich, truly divine breakfast dish a couple times.

My fantastic Mom spoils me and nearly every visit, she makes my favorite. John is extremely open and freely expresses his opinion. He started by asking to “hold” the egg – he he… (he does this at McDonald’s too when ordering a Sausage Egg McMuffin – ha ha – laughing with not at! I always enjoy the look the order taker gives ). I can always tell John looks forward to Ronda’s breakfast when we’re both having a sleepover at my parents – right – as it’s usually Eggs Bennie. (Yes, John goes to visit my parents on his own – he’s phenomenal. This special topic deserves its own entry one day!)

Anyhoo…John has grown, oh – not a good word choice when referring to food and what happens to one’s waist when you’re married. My honey has conformed and started eating eggs. I’m quite sure that there must have been an article in the Men’s Health magazine about the benefits of eating this food product. (If you’re married – I trust you’re aware that men consider this publication almost as recognized as the Bible. One day – I’m going to make a friend that writes for Men’s Health and ask them to write an article about spoiling their partner. I promise – John quotes things he’s read from that magazine every week. Ugh…its amazing how this single monthly publication has so much influence! Whatever Men’s Health reports – must be correct!)

Back to my story! I’m convinced that eating eggs was wrote about in an issue of the magazine, since honestly, John’s decision to start consuming eggs literally changed overnight!

The real reason I was so keen to write about Eggs Benedict today, was because I came across this AMAZING blog entry Homemade English Muffins on Pinch My Salt. I honestly, don’t think I’ve ever imagined making this particular item. However, I’m surprised that I hadn’t – since its the base of my favorite breakfast! I am completely fascinated by how you make them on the griddle and all. When I get a chance to make these creations – I’ll be sure to write about my experience.

Until then…I’m wishin, hopin, and prayin that my Mom will add Eggs Benedict to the breakfast menu at the ranch on the weekend. I’m going up for the weekend to snuggle and oogle over my nephew Sloan…oh and attend my cousin Jeremy’s wedding!

Cool Summer Cuisine

The fabulous Chef Beazley grew up in Texas - where it gets REALLY hot in the summer! When meal time rolls around, the idea of eating warm food isn’t very appealing. We’ve had fun creating cool summer cuisine. John is working on getting the recipes prepared to share with you - in his own online cookbook! Until then, hopefully these pictures will give you inspiration for summer meals.

My talented hubby enjoyed making crepes for his first time! They were for an absolutely divine meal that he cooked – I’ll have to share pictures of it later. However, with the leftover crepes - I made a cool summer dessert with blueberries inside:

Drinks – summer requires amazing cool beverages to enjoy on the patio and have ready when company stops in. John found a recipe for this phenomenal frozen drink – when he had leftover wine to use. The wine lover in him, didn’t want to throw it out or consume a couple days after opening. Merlot Ice:

Practicing

I’ve been spending more and more time with babies and children of all ages lately. I like to think of it as “practice”!

John and I look forward to having a family one day and building a beautiful legacy. I’d like 4 children - but John says we’ll talk after 2! Why does my hubby think he gets to decide? I’m attracting my desire. I will be such an amazing mother to his gorgeous kids – that he won’t think twice about my granting me my wish.

I watched my friends kids for a bit this week and discovered that I have to break into my inner child. We were playing school and Griffin informed me that we were coloring pictures. My direction was that it had to be artistic. So I broke out of my comfort zone of the trusty landscape picture or even barn yard scene.

Emma questioned me multiple times, “What is that?”

“It’s artistic!” That answer didn’t satisfy the six year old.

“Where is the grass?” Ha ha…I gave up.

I was proud of my quick effort.

I realized that I’m a very competitive natured person. We played hide & seek. The kids would count and then yell “Are you ready?” What? If I say anything they’ll follow my voice. Then we played this cool 3D Snakes and Ladders game. The six and eight year old minds weren’t as focused at getting around the board as mine was! Ha ha – I will practice taking a chill pill.

WHY do I live a full life and have lots of unique business adventures on the go? When we start a family, I want to stay home with my kids. I want to continue being a career woman with a business portfolio that fits into my families life. The Beazley’s have big dreams – but we know that if you can believe it, you can achieve it!

Luckily I heard about an awesome tool a couple years ago - Mom’s On the Phone, created by Patrice Matteson. It will help me come up with creative activities to keep my potentially (if they’re anything like John & I) curious children busy!

Home Alone

I hope your week is going fantastic. Here’s a hump day dessert to make you smile! Trust you and your local farmers got some much needed moisture, hopefully in the form of rain…

John is on the road for work, so I’ve been on my own for evening meals. I’ve been spoiled the past few weeks, because Chef Beazley was home every night and had a new creation prepared when I got home. As I’m sure most of you can relate, it’s hard to cook for one person. I eat less and throw a few mix and match items together when I’m by myself. Chef Beazley asked me to use up a partially spoiled peach and left me with a couple leftover hamburger buns when he departed.

My Texan doesn’t eat seafood so I took the chance to enjoy a Fire Roasted Salmon & Aged White Cheddar burger. Ha ha, we enjoy the game of naming our meals!

Then for dessert – my favorite part of meals - which I’ve been known to eat first!

Remember the peach I was telling you about, it was quite sad looking.

I discovered the leftover Coffee Caramel sauce I had in the fridge. I had made it for a recipe I found in a magazine; Coffee Caramel Cranberry Compote Banana split – it was divine!

I poured the sauce into a skillet and warmed it up. Then tossed in my peach pieces, to do the same.

In the meantime, I added vanilla ice cream to my leftover candied cranberries.

He he…this was my favorite part, add the alcohol to flambe!

THEN – you light the mixture on fire with a long lighter. **Kids don’t try this at home.** (don’t think I have any young followers – but you never know one day someone may look at this post!)

 After the flame burned all the alcohol off, I poured the creation on my ice cream. Mmm…

I made enough dessert for at least 2 people, probably could have been stretched with a bit more ice cream for up to 4 people – yikes – I definitely indulged in the entire bowl myself!

Think I went for a rest on the couch to digest OR walked to get the mail! If I could change one thing – I’d have a beautiful pristine white dessert bowl – maybe even one with a funky shape to serve this in!! I’ll add that to my wishlist.

Hope you find inspiration in making a fun breakfast AND take away a few ideas on how to ramp up your presentation when doing everything in life! Food always tastes better when it’s presented fabulous and your mouth waters before you even take the first bite.

Happy Earth Day!

As 2009 kicked off – I made a pact that I would become “Greener”! I can’t believe how much less garbage we have. I only have to wheel our Garbage Can to the curb every couple weeks!!

John is slowly adjusting to all of my boxes that sort my paper, plastic, cans, etc. Since he’s from Texas, where very little recycling is done, I will give him a bit of time to adjust! It didn’t take him long to catch onto returning our bottles and cans to collect our deposit money – because he wanted to get back what he already paid for originally. However, the more I drip the green spirit on him, I know he’ll catch on to recycling and reusing other items ;) I love picking out the garbage he puts in the can under the sink in the kitchen and putting into the recycle box behind the garbage!! I don’t say anything, but actions often speak louder than words.

I also hope to plant a small herb garden and more flowers this year in our yard! I know – crazy to think that I might attempt to keep vegetation alive – however I’m working on mastering the skill – I’m currently a Domestic Goddess in Training!

Make it Beef!

I’m currently developing my cooking skills and just came across a contest that I plan on winning ;) He he…you have to be confident and visualize yourself experiencing the prize, so the energy blesses you with your desire!   Anyhoo…for some reason I decided to let ya’ll know about it also, so that I have some competition in the draw!!  I crack myself up! 

I’m all about cooking the beef recipes, photographing (yes, I will share my experiences/entries with you too!), and entering the contest!
